Familiar outlets of restaurant chains found in Manila have sprung up like mushrooms in Tagaytay City. The restaurant line-up that was once exclusive to Tagaytay alone has been combined with familiar logos that people typically see all around the capital city now. History states that Alfonso Sarayba Jr. or Ponce originally bought a fishpond in Kawit, Cavite in hopes of transforming it into a good source of income. He wanted to build a housing subdivision over land that he was going to reclaim from the fishpond. During the construction of his housing project, someone advised Ponce to open an eatery to feed the workers as fish was already plentiful from the fishpond. Ponce then opened a restaurant and named it after his wife, Josephine and it has been known to be the Home of Fresh Seafood ever since.

Although Sonya’s Garden has been synonymous to upscale dining when in Tagaytay, Josephine rather offers a different approach. If Sonya’s offers all healthy and organic ingredients, Josephine’s offers the best of what our Filipino heritage and cuisine has taught us to love. Bulalo, Crispy Pata, Bistek Tagalog and Sinigang na Sugpo, all your favorite Filipino dishes are cooked to perfection at Josephine.

This Tagaytay restaurant’s view is a huge part of its dining experience. Josephine’s has a prime spot along the Tagaytay Ridge as it sits close to the edge of the ridge, giving customers a 180-degree unobstructed frame of the Taal Volcano, the Taal Lake and the vast blue skies in its entire splendor. Customers are greeted with grand glass walls with water cascading down a stone wall. Park benches are available at the back patio for both the hungry and the full ones as customers wait for their tables or for others, wait until the food goes down after a hefty meal. One can’t help but feel right at home with the courteous staff, spacious seating and fast service of the restaurant. Josephine still has its original outlet in Kawit, Cavite since 1966 but others claim that the food there does not compare to what is served in Tagaytay. Perhaps blame it on the freshest ingredients from Tagaytay coupled with a magnificent view and a cozy ambiance. This kind of setting will definitely boost a customer’s appetite for good food. They have also branched out around Metro Manila with outlets in Cubao, Pasay, Makati, Greenhills and Baclaran.
